Mozzarella Cutlets

It’s my favorite day of the month, I get to reveal my Secret Recipe Club assignment for September. I’m honored to be a part of this diverse international group of food bloggers. In case you forgot, everyone in the Secret Recipe Club gets “assigned” a blog from which we are supposed to pick a dish to cook. But, it’s all done in secrecy. It isn’t until the ultimate reveal day (today) that everyone showcases the dishes and discovers who’s been their secret foodie link. This club has provided me valuable exposure to blogs I might not otherwise encounter.

My September assignment was the food blog, Enriching Your Kid, a food blog written by Shirley, a clinical psychologist by profession who’s now a stay-at-home trying to find nourishing and enticing meals to feed to her kids!  Most of Shirley’s recipes are Indian-based, from Sweet Potato Kheer to Ragi Porridge to Vermicilli Biryani with Tahini.  I wanted something that tasted and sounded simple and knowing that my kids love any sort of cheese (just like their dad), I decided to try the Mozzarella Cutlets.

Since my 8-year old had a field in the morning I thought these would be a nice surprise snack.  However, after frying them I realized that the mozzarella cutlets seemed more like potato latkes than fried mozzarella cutlets.

I swapped out some of the herbs and added in a minced clove of garlic. The next time around I would definitely add more cheese too, 3 tablespoons is hardly any cheese for a recipe named Mozzarella Cutlets..

My daughter took the job of mashing the potatoes and pounding the balls into cutlets, I oversaw the frying.  It’s important to remember to use lots and lots of oil (at least an inch on the bottom of your frying pan) to render the outsides of your cutlet very crispy and FRIED.  After messing up a couple of cutlets we also realized we had to make them a little thicker so they wouldn’t break when we flipped them.

We ate the mozzarella cutlets with some cold applesauce and they tasted delish.  Make sure to generously sprinkle them with salt.

  10. Looks good! Just be careful when you increase the cheese, they tend to fall apart. If you add some bread crumbs in the mix they’ll hold better.

  12. A great idea for a meatless cutlet, though I would probably add the steak to the same plate…lol! Definitely more cheese is needed, I agree.
