Baked Parmesan Carrot Fries w/ Chilled Cilantro Dipping Sauce

A couple weeks ago I went to an amazing event where culinary artist Clare Crespo showcased many creative ways to have “fun” eating our veggies through edible vegetable art.  Remember, we made a cook veggie flag and a veggie wagon too?  Well, what happens when you’re just not in the mood to construct vegetable-based “sculptures?”  It’s very easy to take a basic veggie, tweak the way you’d normally prepare it, and serve it to your family in an entirely different light.  Take carrots for example.  We eat carrots all the time at dinner.  However, … [Read more...]

Holiday Carrot Pudding

Don’t you feel like you’re on a constant sugar rush the entire month of December?  After all, it’s holiday time. We're all  hyper-focused on those festive treats: cakes, cookies, candy, pies.  Cookie recipes are swapped, sweet-toothed teacher gifts are distributed, candy canes are licked adnauseum.  Poor veggies.  They seem to always get the shaft. Well, who wants to talk about boiling broccoli or steaming asparagus when you can bake and design holiday shortbread cookies or make and break apart festive Peppermint Bark?  Let’s face it, the … [Read more...]

Kale Dip with Carrots

We started making homemade kale chips just a few weeks ago and already my kids have asked if there's anything else we can "do" with this new favorite veggie.  I thought I was hearing them incorrectly at first.  Never have they requested a vegetable-based dish.  And, I certainly didn't want my small window of opportunity to pass before I got a chance to create something new. Last week I leaf-eared a very easy (and healthy) recipe for Kale Dip with Snap Peas in the April issue of Whole Living Magazine.  It appealed to me because it's quite … [Read more...]

Passover: Tzimmes

Today I'm sharing a family Passover recipe from the archives of Susan Weikers Balaban.  Susan, like me, is a native of Baltimore, Maryland and grew up in a loving family.  Her mother, who just celebrated her 100th birthday,  enjoyed entertaining at home (like mine!). No doubt some of Susan's cooking skills and creative table ideas came from holiday gatherings and parties at home. From her mother's influence, entertaining family and friends has become her passion. Susan now authors a blog called The Creative Table where she shares her ideas for … [Read more...]

Turkey Meatballs

I’m sharing another recipe from my recipe exchange last week. While some of my friends weren’t thrilled with the recipes they received –apparently dishes comprised of mainly processed canned foods--- I lucked out and have already experimented with three of them. The requirement for the exchange was to submit a recipe that’s simple, contains only a few steps, that can be easily memorized. The first recipe I received, the Hawaiian Chicken recipe, was such a hit that I made it again on the grill over the weekend. Yesterday morning I received … [Read more...]

Fried Cauliflower Rice

If you go online and search for rice-based recipes, there are myriad options. It’s totally overwhelming. Did you know there are more than 40,000 different rice varieties? However, in my research online, I kept finding different variations of one recipe that totally peaked my interest: Cauliflower Fried Rice. At first I mistakenly thought the recipe was a rice dish with bits of roasted cauliflower—a vegetable that is totally underrated in my household. However, Cauliflower Rice doesn’t contain rice at all. The “rice” part of the dish is … [Read more...]

Luckily, Serena has literally just finished making some batches of her Veggie Soup.  In fact,  she claims she simply “cleaned out” her fridge for the recipe and used tons of veggies to create a the … [Read more...]
