  Yesterday I came home to a package from the US Highbush Blueberry Council.  It was bursting with cartons of blueberries! My prerequisites for a summertime salad are: it must be easy to make,  it muse take little to no time in the kitchen, and it must taste light and refreshing.  Oh, and bonus if it incorporates the use of fruit. Steamy hot weather calls for cold-chilled soups. Who's excited about cooking hot foods during the dog days of summer. I usually opt for salads, smoothies and any meat that can be quickly cooked on the grill. Sitting by the fire over winter break last week, I had a sudden craving for a thick slice of Mom’s Blueberry Brunch Cake. Why? The cake itself is deceptively light and tasty and can be enjoyed at all hours of the day.  It’s just as good served alongside a cup of tea at breakfast as it is after a nice hearty dinner. Unfortunately, I didn’t have any blueberries around. Rustic Pear Tart

  My kids love fruit. Every morning for breakfast they're either eating strawberries, bananas, blueberries or sliced apples.  However, I realized one fruit conspicuous by its absence from their diet: pears.  We don't eat oranges regularly but we drink orange juice daily.  We never eat apricots but we love apricot jam on a toasted bagel and applesauce with apricots.  When watermelon is in season we eat it cubed or in an awesome watermelon, mint, feta salad.  When did pears become so elusive?  I think the last time my kids had pears was when … [Read more...]
