Red and White Quinoa with Grapes

Terrific Quinoa Salad that's sweet, nutty and filling!
Ingredients
  • Quinoa:
  • 4 cups water
  • 1 cup red quinoa, rinsed
  • 1 cup white quinoa, rinsed
  • ½ teaspoon kosher salt
  • ½ cup chopped chives
  • 1 cup halved red grapes
  • 1 cup halved green grapes
  • ½ cup pomegranate seeds
  • ½ cup smoked turkey or grilled chicken
  • ½ cup slivered almonds
  • Dressing:
  • 1 shallot, minced
  • 1 tablespoon honey
  • 2 teaspoons Dijon mustard
  • 1 teaspoon kosher salt
  • ¼ cup raspberry vinegar or red wine vinegar
  • ¾ cup extra-virgin olive oil
Instructions
  1. For the quinoa: Combine water, both types of quinoa, and slat ina large pot over medium-high heat. Bring to a boil, and then reduce heat, cover and simmer for about 15 minutes, or until all the water is absorbed. The quinoa should look fluffy and puffed. Let cool.
  2. For the dressing: In a small bowl, whisk shallot, honey, Dijon, salt and both vinegars. Slowly add oil, whisking vigorously until emulsified and well blended.
  3. In a large bowl, mix quinoa, chives, both grapes, pomegranate seeds, turkey or chicken, and slivered almonds. Add half the dressing and toss. Taste and add more dressing to taste.
