Roast Chicken Soup with Vegetables

Of course Mom made her own chicken stock. She’d use leftover  bones and skin from a cooked or raw chicken carcass and add in celery, carrots, onions, parsley, salt and pepper to the old worn out stock pot.  The back freezers always had Tupperware “stocked” with her homemade soup base. I still haven’t mustered up the nerve to to make my own stock (yes, I know it looks and sounds easy).  However, I did make the most wonderful Chicken Soup with Roasted Vegetables yesterday to try to ward off another frigid day of sub-freezing temperatures. This … [Read more...]

Pistachio Crusted Chicken w/ Raspberry Sauce

I will admit this post is a re-post from last summer.  However, this recipe is so good that it's worth the spotlight again!  Definitely get it on your summer repertoire. If you were to taste just one bite of the pistachio-crusted breast, you’d mistakenly think it’d taken hours of preparation.  Not so!  Not so! Ever breaded a chicken cutlet before?  That’s essentially what you do to your chicken breasts but, instead of coating them with breadcrumbs, you’re covering them with ground pistachio nuts. Whole Pistachios Crushed Pistachios The … [Read more...]

The Benefits of Family Dinner (and an easy chicken recipe)

Yesterday I attended the Family Dinner Conference at NYU hosted by Blog for Family Dinner dedicated to creating a community of people who care about food, family, health and the environment and who believe that family dinner is a powerful force for good.  Blog for Family Dinner is a collaborative project between the blogs: Dinner Together, Eat Dinner, and Time at the Table. I had written a Mother's Day piece  for Blog for Family Dinner almost two years ago and have followed them ever since I decided to take on my own crusade towards … [Read more...]

Garlic Chicken

In the past week, I've received emails from at least a DOZEN random people telling me they made Mom’s Garlic Chicken recipe and it was delicious.  This feedback warmed my heart as Garlic Chicken was also my all-time favorite dish for dinner as a child and still today as an adult. I decided to repost the recipe and abbreviated story again, 1 1/2 years later, with the hopes that even more people will benefit from this tasty dinner dish--- it's seriously that good.  The juicy plumpness of the chicken breasts coupled with the sweet, buttery and … [Read more...]

Chicken Quinoa and Broccoli Casserole

Now that Bake it Happen has officially come to an end (I will announce results from the campaign this week), I’m back to my normal grind.   A piece of my Sunday afternoons is usually reserved for my weekly meal planning. It helps alleviate any added stress during those frenetic afterschool hours. Armed with a short list of ingredients, Monday early mornings I stock up on the necessities for my earmarked meals. I’m so thrilled to have received my copy of The Pollan Family Table, the new cookbook from the Pollan sisters and their mom, Corky. I … [Read more...]

Columbian Chicken and Potato Soup

It’s Seriously Soup day today, featuring one of my favorite bloggers, Serena, who authors a blog called Seriously Soupy.  Serena started Seriously Soupy as a creative outlet for herself after her first daughter was born, which combined her passion for cooking with an interest in learning more about soups and soup making.  Since it started, she has given soup tours and taught soup classes and has a catalog of over 100 soups on the site!  You can join Serena on her Soupy journey at SeriouslySoupy.com and twice a month you can find her here, at My … [Read more...]

Potato Chip Chicken

I've had such a busy week with back to reality, back to school, the STRUT FASHIONABLE MOM SHOW and everything in between.  Having time to prepare an involved dinner was just not in my cards.  Next to my crock pot and all the hassle-free dishes it produces, my other go-to meal is Potato Chip Chicken.  Unless your entire family is vegan, it's safe to say,  most people probably have chicken in their stocked fridge or freezer and some form of "potato chip" (healthy or otherwise) in their pantry.  When I have at least 35 minutes to spare for dinner … [Read more...]

Pistachio-Crusted Chicken Breasts w/Raspberry Sauce

For me, there’s no better bonding opportunity than by cooking alongside my big sister; especially when we’re recreating one of Mom’s recipes.   Whenever I’m with my dad and my sister (together )I constantly feel the intensity of the loss of my mom.  This weekend I was with my dad and my sister so, Mom's absence followed me everywhere.  But, I’m still determined to fill that overwhelming void with memories enhanced by her food. As luck would have it, my sister suggested we recreate one of Mom’s celebrated recipes that her family … [Read more...]

Asian Chicken Pasta

My mom was such a great cook, it felt like she was never in a bind to come up with something delicious for dinnertime.  Every dish that graced our table seemed labor-instensive, as if she struggled for the better part of the afternoon over the preparations.  At least, that's how I remember our meals.  On the contrary, mom was always working one job, and maybe one job plus a side business, so I know she was probably totally jammed after work and before dinner.  And, my dad was always home for meal time expecting a home-cooked meal so I'm certain … [Read more...]

Easy Chicken Parmesan

Disclaimer – I was compensated for writing this post by Prego®. However, all opinions expressed within are, as always, my own. Back-to-school means back-to-craziness. Getting into a routine is always a family goal but, with my children going in different directions after the school day dismisses, often the idea of a home-cooked dinner can be the first to fall by the wayside. I’ve been committed to having one set dinnertime for everyone, regardless of which sports are being played where or who has more homework to get started. Also, … [Read more...]

Mom’s Chicken Gumbo

Today is the first day of school for my kids!  It’s been a long fun summer but, even my 7-year old admitted he’s “ready for school to start.”   The night-before-the-first-day-of-school dinner is always important.  It’s become a tradition (started only last year) to reclaim the structure of mealtimes and scheduled days – both seemingly elusive during the fluid summer months. I wanted to make a hearty dish, one I knew would appeal to both my kid’s tastes and somehow calm their jitters. I uncovered Mom’s recipe for Chicken Gumbo … [Read more...]

Judy’s Garlic Chicken

Mom’s Garlic Chicken was my all-time favorite dish for dinner.  Remember, the Banana-Chocolate Chip loaf was my favorite dessert. Are you starting to discover a pattern here? Of course I had to start my culinary expedition cooking meals that were my highlights.  That softens the blow a little bit, right?  I don’t consider this cheating but rather, like getting that long summer reading list from school and only starting with the books of interest.  If I could purchase the Cliff Notes for all of Mom’s recipes I would, but, since that’s not a … [Read more...]

Lemon Scallion Chicken and Vegetable Kabobs

The staples to 4th of July are the fireworks and flags, but everyone knows it's actually all about the food. When most people think of a 4th of July cookout, they envision hot dogs and hamburgers, creamy potato salad and greasy chips-- all delish, but not so great for your waistline. However, doesn't it takes a lot of resolve to pass up the chips and ice cream for healthier choices such as veggies and fruit? With the 4th of July right around the corner,  why not try to trim the fat a little bit?  Check out this tasty recipe … [Read more...]

Chicken Potpie

I remember eating chicken pot pies in the lunchroom at school.  There was something so intriguing and mysterious about each student having their own little miniature pie-baked meal.  They were a welcomed hearty meal usually served on a cold winter's day. Since I had so much success with other single serve recipes like the meat-stuffed zucchini boats and the mini frittatas I decided to take a crack at making my own single serve chicken pot pies for dinner last night. There's nothing better than pie for dinner. In the past I have purchased 9” … [Read more...]

Scallion Chicken and Vegetable Kabobs

It's HOT outside.  So hot that the idea of cooking anything in the kitchen becomes incomprehensible. When the mercury rises, I always take my food to the grill. Many envision grilling dogs and hamburgers, creamy potato salad and greasy chips during the dog days of summer. I'm not denying that they're all delish, but they're not so great for your waistline. Why not try to trim the fat a little bit?  After all, we are still smack in the middle of bathing suit season so we should be cognizant of our middles! Looking for something to grill … [Read more...]

Chicken Tortilla Bake

Frigid temperatures coupled with cranky, tired kids means comfort food becomes my go-to dinner on many weekdays during the dark winter months.  Rich in flavors and undeniably hearty, it's ironic that most comfort food is surprisingly simple to make. Whether you're into soups, or casseroles, or slow cooked meals, none of these recipes require much culinary skill at all. However, the meals are tasty, and filling and ideal for freezing or to be used as left overs. Need I convince you more? Last night's dinner was frenetic.  I had … [Read more...]

Honey Glazed Crock Pot Chicken

Just because the weather's getting warmer and spring is literally around the corner doesn't mean that your slow cooker needs to be stowed away until next winter.  Before my ventures into slow cookery, the crock pot was synonymous with heavy, hearty stews and calorie-laden dishes (read wintertime).  However, there are plenty of dishes that won't bust your gut but will satiate your appetite. I was still eager to try chicken in the crock pot.  It seems the only meat I've tried to cook is beef.  And, while the crock pot is better-served for red … [Read more...]

Slow Cooker Ritz Chicken

People who don't own a slow cooker look at me like I have three heads when I gush about our slow cooker recipes.  The look I get is similar to the way people respond to sleep away camp.  If they themselves never experienced the joys of living away from their parents over the summer as a child,  then they can't even imagine (or entertain the thought) of sending their own kids. Bottom line: slow cookers are tremendous time savers in the kitchen.  The ease of use is remarkable: simply dump in your ingredients and let the appliance do … [Read more...]

Superbowl: Slow Cooked Pulled BBQ Chicken

Hosting a Super Bowl viewing party should be easy. They’re unpretentious, casual parties where  (it might be the only time) you can serve a bevy of not so healthy appetizers--from Buffalo wings to cheese balls--relatively guilt-free. This party isn’t about cooking up the latest culinary trends on your best china. Rather, it’s a night overflowing with plain and simple portable dishes since it’s assumed that the television (not the food) is the focal point of the evening.Cooking a dish in a slow cooker for your Super Bowl party is wise way to … [Read more...]
