Zucchini Parmesan

Apparently, the other day was National Zucchini Day.  I'm not sure who actually coins these days.  Are they officially on the calendar?  I think not but, we were happy to celebrate in our own way. Watermelon Gazpacho

Calling all soup eaters, or non-soup eaters.... Have you tried gazpacho this summer?  I sure hope so.  Just recently I posted one of Seriously Soupy's seriously tasty Mango Gazpacho soup recipes.  I've made it 3 times since and have "wowed" my friends. To Juice or Not to Juice?

Two months ago I received a massive box containing a Green Star Twin Blade Elite Juicer for review purposes--- let's place the emphasis on the word elite for the purposes of this post. It sat on my floor untouched during those two months. By the time I got the nerve to open the box, dust had started to form on the outside. Light, easy dishes go hand in hand with the hot, humid days of summer. Fish Tacos w/Spicy Tomato Cucumber Salsa are ideal.
