Quinoa and Chia Salad

I’m continuing on my crusade to get everyone to incorporate Chia Seeds into their diets. I’m not pretending to be a nutritionist nor am I a dietician but, when I do stumble upon something that totally enhances the nutritional component of a dish without detracting from its flavor, I love sharing it. Raspberry Almond Chia Pudding

Two years ago Chia seeds made their way to my family's table.  I was laughing at how long it took me to discover these seeds since they had been used to power the ancient Aztec warriors as well as the Indians of the Copper Canyons-- both of whom were renowned for their superhuman endurance and fitness levels.
