Quick and Easy Coffee Cake

For 10 summers at camp, I’d wake up every Sunday morning and head to the dining hall where I’d indulge in a vast buffet boasting the most amazing coffee cake. It was served warm, super moist, with a sinfully sweet crumbly cake topping. It was so good, you simply could not eat just one piece. At that point, I’d break the rules. I’d pack more coffee cake pieces in dozens of napkins, slip them under my bathrobe, and shuffle back to my cabin – where there was a strict no food allowed rule. Celebrating Homemade with Love

To celebrate the launch of Jennifer Perillo's amazing new cookbook, Homemade with Love, my daughter and I were invited an exclusive cooking party hosted by Kidzvuz and Chef Tony's Cooking Adventures on the Upper West Side of Manhattan. In my kitchen-clueless mind, Clafloutis sounded more like some sort of tree fungus rather than a celebrated baked custard French dessert.  Apparently, a traditional clafoutis contains cherries arranged in a buttered dish … [Read more...]

Quick and Easy Meatloaf

I had an aha moment the other morning when I was scratching my head trying to figure out what to make for dinner. I wanted to make something meat-based since we over-indulged on pasta every night on our family vacation.  However, I knew I'd have no time to get to the market for any fresh meat. So, whatever was in the freezer would have to suffice! Lucky for me, I had 1 1/2 pounds of lean ground meat needing a good recipe suddenly I had a craving for meatloaf.   I realized my kids have never eaten meatloaf.  They've had their fair share of … [Read more...]
