My kids have discovered a taste for eggplant in the last few months so I figured, why not try Eggplant Pizza? Vietnamese Spring Rolls

My family just got back from an unforgettable trip to Southeast Asia. We have very dear friends who relocated to Hong Kong so that was the impetus to setting our sights eastward.
