Corn Cake

With the holiday weekend upon us who isn’t looking for a relaxing weekend of sun, swimming and some BBQ? Since I live in a city apartment and don’t have access to cooking outdoors year round, I can’t wait to get behind a grill this weekend to simply grill some burgers and chicken—nothing fancy.   Beginning Memorial Day, we try to eat al fresco on the weekends as much as possible. Hawaiian Chicken Breasts

I bet we can’t find a grandma today who doesn’t own a vintage recipe box with her old recipes cards from the 1950’s and onwards. Unfortunately, they’re a dying breed. Within the past decade, due to the proliferation of recipes sites on the internet coupled with less demand for actual hard copy cookbooks and handwritten recipes, recipe cards will soon get filed under the moniker of relics from the past. Roasted Panko Asparagus

I’m trying out some simple veggie recipes because I find that during the summer months, we increase our vegetable intake two-fold. Last week was successful with the addition of the Cauli Tots to our mealtime repertoire. Last night we tried a new Asparagus recipe. Rich in B vitamins, vitamin C, calcium, and iron, asparagus is one of the first crops of spring harvest.
