Kale and Green Bean Salad

Our new veggie discovery this year was KALE!  It took about 5 tries and now both of my kids love kale.  Of course, the first time I served it to them was as a chip, baked in the oven with a little bit of olive oil, sea salt and parmesan cheese.  Now that they’re convinced they like kale, I feel like I’ve got full reign to try more dishes on them. Cauliflower Au Gratin

Last night for dinner was left over night!  I was thrilled to reheat the lasagna from Tuesday and the fried rice from Wednesday.  With the main dish and the side accounted for, all I had to fill in was the veggie.  I decided to make some cauliflower since my 6-year old informed me that the cauliflower at the school lunch looked like gray fungus.  Well, he’s not that far off.  And, how could I get frustrated? Green Beans with Shallot Sauce

My family is on Spring Break right now.  We decided to head out west on vacation and explore the desert as well as the natural wonders of the Grand Canyon.- which I must say is truly breathtaking.  The word Grand does not do this scenery justice. While the nature hikes and the horseback rides and the desert exploration have all been invigorating, the food has been underwhelming. Brussels Sprouts w/ Bacon and Maple Syrup

Do you know any children who willingly eat Brussels Sprouts? I have no recollection of my mom even handling these vegetables when I was young.  However, by reputation, they were automatically placed way, way, way down on the bottom of my "Do Not Eat" list, right behind spinach.  But, even Popeye eventually got me to try spinach.
