Pumpkin Black Bean Soup

  While we haven't officially gone pumpkin picking yet, we're definitely incorporating pumpkin into our kitchen. Last Thursday was the kick off our our national breast cancer baking campaign Bake it Happen and our newest campaign recipe is a tasty Pumpkin Oatmeal Chip Cookie.  I made 3 batches with my kids this weekend that we'll be distributing over the course of the week. Roasted Red Pepper Dip

I have a note on our kitchen bulletin board. The note is the last one my mother wrote to my daughter before she died. Mom secretly stuffed it in her lunch box on the way to day camp.  My daughter, then 6, thought enough of the note to save it and to not throw it away like any 6 year old would in the fury of scavenging for their lunch food. It’s officially starting to feel like the precursor to winter. Snow on Thanksgiving? To adapt, I’m kicking off my winter survival mode in the kitchen. Soy Noodles

We're gearing up for Passover in a week so that means that we've been plowing through some of the carbs that are in our pantry.  I usually don't cook too many noodle dishes for dinner because I know that my kids probably default the spaghetti dishes at least two days out of the week. But, this dish is so tasty and easy to make, I knew it would be a homerun. Roast Chicken Soup with Vegetables

Of course Mom made her own chicken stock. She’d use leftover  bones and skin from a cooked or raw chicken carcass and add in celery, carrots, onions, parsley, salt and pepper to the old worn out stock pot.  The back freezers always had Tupperware “stocked” with her homemade soup base. Beef Stew

There's a little chill in the air.  It's the kind that makes you want to lay around on a lazy Sunday afternoon.  While I can't imagine having a lazy afternoon until my kids are in college, the next best thing would be to slow cook, or to make a big pot of nourishing soup-- the ultimate comfort food.
