Slow Cooker Chicken Chili

It’s finally feeling like mid-fall here on the east coast - crisp cool days, fleeces, warm drinks, blankets on the beds. November always kicks off my season of slow cookery.  If you’ve been following the blog, you know I’ve got lots of slow cooker recipes from which to choose.  From slow cooked steel cut oats to apple butter to tortilla soup, I’ve rolled up my sleeves and delved into the slow cooker world without fear.  I simply can’t believe that two years ago I had never worked with a slow cooker, and had no idea about the time-saving … [Read more...]

Chicken and Cheese Lasagna Roll Ups

photo courtesy of iVillage.com It’s easy to get in a rut around dinnertime. How many times have you scratched your head trying to diversify your dinner options only to fall back on the same boring pasta dish? At the end of the day, there’s nothing more frustrating than having tired cranky kids who refuse to eat what’s being served. Don’t fret, sometimes that elusive new dish is just a tiny tweak away... For winter break, I allowed myself the latitude to close the kitchen—not literally but figuratively.  We were traveling on a … [Read more...]

Chicken Sliders w/ Cole Slaw

It’s a challenge coming up with new meals every night for my kids.  Over a year later, I’m still learning that when you find something that works, don’t stop there.  Challenge yourself to create other related dishes that will help stretch out your meal repertoire. For example, all of a sudden, we’re all about CABBAGE! Who would’ve thought? A year ago, my kids only willingly ate broccoli and maybe some mini carrots. Ever since they (reluctantly) tried my first tasty attempt at Brussels sprouts with Bacon & Maple Syrup, I’ve created … [Read more...]

Chicken Fesenjan

My son has an insatiable desire to learn everything he can about the world; mainly about other countries. Although he hasn’t formally taken a US History course, he’s already decided that US History is boring because “it’s too new.” He’s 9. At this point, he knows more than I do about world geography and facts (but he himself doesn’t know this thanks to the speed and accuracy of my secret Google searches when his back is turned). He reads the old-school atlas my father gave to him and he insisted he go off to sleep away camp with one of … [Read more...]

Chicken Tzatziki

My family loves Greek food and especially tzatziki sauce.  Just one dollop of this lemony, garlicky yogurt sauce has completely changed our chicken landscape.  And, when it’s made with freshly-picked veggies, it just tastes that much sweeter.  Ironically, while I love tzatziki sauce (so much so that I would use it as a face mask every night), I’ve never made a batch at home.  Not really sure why- probably kitchen confidence again. Ok, just one look at the massively phallic cucumber growing in my garden was the inspiration I needed to get my … [Read more...]

Measuring Time with Your Kids: Quantity vs. Quality

“To be in your children’s memories tomorrow, you have to be in their lives today”   - Anonymous Last week, I received an invitation from Moms and the City to attend a preview screening of Sarah Jessica Parker’s new movie, “I Don’t Know How She Does It,” the story of a career-driven mother who constantly deals with the balancing act that accompanies the fast-paced life of a working mother.   Afterwards, the audience was able to query both Sarah Jessica as well as Alison Pearson, the author of the best-selling book. Save a few dad … [Read more...]

The Benefits of Family Meal Prep

As a child my family's menu consisted of two choices: take it or leave it. ~Buddy Hackett It’s safe to say that the by-product of the back-to-school rush is a frenetic household environment.  Until a sense of routine is established, everything seems a little bit undone.  New start to the school day, different bus pick up times, later school days, after school, religious school, increase in homework – all of these factors exacerbate the pace of the day and usually what tends to suffer most is dinner time. For me, after a long harried day at … [Read more...]

Slow Cooker Chicken Tortilla Soup

This recipe for Slow Cooker Chicken Tortilla Soup is one of my favorites.  I look forward to making it and every year, I inevitably tweak the ingredients.  That's the one big relief coming off of our successful Bake it Happen Breast Cancer Baking campaign last month.  While baking is exact, like a science, working with the slow cooker is anything but.  You can manipulate ingredients and measured amounts each time you work with the same recipe to get your desired results. Let's face it. It’s been so mild out, who’s really thinking about … [Read more...]

Slow Cooked Chicken Enchiladas

Growing up, Mom very rarely cooked Mexican food save for the highly-anticipated "taco nights" or "chicken fajita dinners."  Then, off to college in the Midwest-forget about good authentic Mexican food.  My only Mexican stint was at the drive through of the local Taco Bell to satiate those late night cravings. Now that I'm living in New York City I have easy access to many legitimate and not-so-legitimate Mexican groceries and restaurants.  But, what do you do when you don't feel like ordering in (we all know Mexican food does not travel … [Read more...]

Chicken Tetrazzini

Snow has been steadily falling for the past few hours, turning the city into a peaceful winter diorama. Temperatures have plummeted to low teens and we’re bracing for another bitter day today complete with ample sledding, movie watching, reading and eating. Knowing that we'd be stuck indoors for some time, last night I knew we needed the ultimate comfort food for dinner-- to warm us and to tide us over until today, when we could happily enjoy the leftovers again.  I decided to make one of mom’s hearty casseroles—with chicken and noodles and … [Read more...]

Chicken Burgers

After going a full week with no bread (in observance of Passover), I decided tweak our celebrated turkey burger recipe and use chicken.  Remember that it's unique in that it doesn't integrate bread crumbs and ketchup to bind the meat together, but rather onion soup mix. Again, what a difference.  Instead of bland, mealy burgers that require loads of toppings to acquire flavor, the new chicken burgers were moist and tasty with a little zing from the onion mix.  The omission of the bread crumbs improved the consistency ten-fold. But, don't … [Read more...]

Chicken and Orange Couscous Salad

This is the harshest winter in the northeast in my recent memory.  I’m over the snowstorms, myriad school closings, and bitter cold temperatures.  While I’ve put my slow cooker in overdrive to create warm and hearty meals, I felt I needed to off-set winter’s cruel wrath with a dish that’s as refreshing as it is satiating. I was thrilled to receive a shipment of Heritage Reserve Navel Oranges the other day to help jump start my thoughts to springtime!  Heritage Reserve is quite unique in that the orchards were planted between 1896 and 1960 … [Read more...]

Friday-Food-Frenzy: Chilled Summer Soups

When most people think of cooking a summer dish, soup probably doesn't immediately come to mind.  Summer warrants cool and refreshing, not hot and comforting.  Have you ever tried chilled soup?  They're the most refreshing appetizer to any summer meal and they're simple to make.  My mom was heralded for her Chilled Cucumber Soup.  It always perked eye brows and taste buds whenever it was served.  She usually whipped up a fresh batch before we went over someone's house for dinner.  The cuisinart would be humming as the cucumbers and yogurt and … [Read more...]

Spicy Buffalo Chicken Meatballs

Super Bowl is almost here. My hometown team, the Baltimore Ravens, are playing! I haven’t been this excited (or even cared) since 2001, when the Ravens last played in the Super Bowl.  Actually, this might even be the first time I'll focus on the football being played rather than just tasting the assortment of food being served.  But, that doesn’t mean I’m not going to offer a bunch of tasty foods to supplement the game.  Last week I entered a Super Bowl Snack off challenge and made some Slow Cooked Pulled BBQ Chicken.  Yesterday I sampled … [Read more...]

Chicken Fried Rice

This recipe is inspired from my Teppanyaki Be-the-Chef training at Benihana last month. Now that I've made chicken fried rice on a legitimate habachi grill at the restaurant, I've got the confidence to replicate the dish on my little 4 burner gas grill. Trust me, this dish is better than take out and can be served as a main course with the addition of chicken. The key to this rice is the integration of sesame oil, egg and day-old rice. I planned ahead and used a rice-cooker to cook the rice to peak fluffy perfection and stored it in … [Read more...]

Secret Recipe Club: Cheesy Chicken and Rice Casserole

Yay!  It’s my favorite day of the month, I get to reveal my Secret Recipe Club assignment for January. I’m honored to be a part of this diverse international group of food bloggers.  In case you forgot, everyone in the Secret Recipe Club gets “assigned” a blog from which we are supposed to pick a dish to cook.  But, it’s all done in secrecy.  It isn’t until the ultimate reveal day (today) that everyone showcases their dishes and discovers who’s been their secret foodie link.  This club has provided me valuable exposure to blogs I might not … [Read more...]

Chicken Asparagus Quiche

This week we resumed our Wednesday night Breakfast-for-Dinner ritual.  We’re trying to get back into many of the routines that were forgotten over summer vacation. I decided to adapt one of Mom’s quiche recipes.  My kids have loved all the other egg-based dishes I’ve made (calling them egg pies) so, I figured I’d experiment with a Chicken Asparagus Quiche. This quiche dish is very easy to create and contains some short cuts to appeal to any hard-pressed parent trying to get a quick meal on the table.  Rather than cooking chicken, just buy … [Read more...]

White Bean Chicken Chili

The crock pot is awaiting its fall unveiling.  We’re planning to go apple picking over the long holiday weekend so the inaugural slow cooked dish will be Mom’s celebrated Apple Butter. But, I still found a way to make some warm, hearty comfort food to combat the cooler weather and my kids’ adjustment to the long draining school days. White Bean Chicken Chili is a welcomed alternative to its better-known sibling, Beef Chili.  The biggest difference, it tastes much lighter and seems healthier.  My family tends to err on the side … [Read more...]

Slow Cooker Coconut Chicken Curry

Yay!  It’s my favorite day of the month, I get to reveal my Secret Recipe Club assignment for October. I’m honored to be a part of this diverse international group of food bloggers.  In case you forgot, everyone in the Secret Recipe Club gets “assigned” a blog from which we are supposed to pick a dish to cook.  But, it’s all done in secrecy.  It isn’t until the ultimate reveal day (today) that everyone showcases the dishes and discovers who’s been their secret foodie link.  This club has provided me valuable exposure to blogs I … [Read more...]

Super Bowl: Pulled Chicken Sliders

Hosting a Super Bowl viewing party should be easy. They’re unpretentious, casual parties where  (it might be the only time) you can serve a bevy of not so healthy appetizers–from Buffalo wings to cheese balls–relatively guilt-free. This party isn’t about cooking up the latest culinary trends on your best china. Rather, it’s a night overflowing with plain and simple portable dishes since it’s assumed that the television (not the food) is the focal point of the evening. Cooking a dish in a slow cooker for your Super Bowl party is wise way to go. … [Read more...]
